Dragon fruit drink

Recipe made in collaboration with Chef Nico Mejía – Sicar Farms

Dragon fruit concentrate
75 g dragon fruit
22.5 ml natural syrup

7 ml ginger syrup
1 lime wedge
20 g mashed dragon fruit
25 ml mezcal
3 oz concentrate


For the concentrate, blend 75 g of dragon fruit with 22.5 ml of natural syrup. Then, mash the dragon fruit with ginger syrup and lime juice. Add mezcal and the concentrate to the shaker, mix well, pour into a glass and top with tonic water.
